Popcorn is one of the best wholesome, carby snacks around. It’s a whole grain & you get 3 cups of the air-popped version for under 100 calories.
I’m obsessed w/ making popcorn in THIS air-popper. Once out of the popper, it’s a blank canvas for all sorts of toppings, but my favorite flavor combo lately gives you a cheezy-Dorito-tang. #SuperSwap.
– In a large bowl, pour 1 tablespoon extra virgin olive oil & 1 tablespoon apple cider vinegar.
– Put 1/2 cup kernels into the air-popper, pop them right into the large bowl & toss as it’s popping.
– Toss the finished popcorn w/ 2 tablespoons nutritional yeast* & 1/4 teaspoon sea salt. Makes two-200 calorie servings.
*nutritional yeast: It’s yeast grown on sugarcane or beets, then deactivated, heated, washed & packed into bright-yellow flakes. Some call it the ‘vegan Parmesan’ because of its cheezy flavor. I keep mine in a glass shaker in the fridge to add flavor, fiber & protein to popcorn, dressings and sauces. Buy it in the bulk section of the health food store & look for brands that fortify w/ vitamin B12.
