Spinach Salad with Thousand Island Yogurt Dressing

Ingredients

  • Quick Thousand Island Yogurt Dressing:
    • 3 Tablespoons plain 2% Greek yogurt
    • 1 Tablespoon organic ketchup
    • 1 Tablespoon sweet relish
    • 1 Tablespoon apple cider vinegar
  • Salad:
    • 1 bag (6 oz) Dole baby spinach
    • 2 cups sliced mushrooms
    • 1 hard boiled egg, cut into 8 wedges
    • 1/4 cup thinly sliced red onion

Directions

  1. Whisk together dressing ingredients.
  2. Toss with salad ingredients.
