Orzo Salad with Artichoke & Tomato

DOLE Salad Month

Inspired by DOLE Salads. Perk up your party's pasta salad with flavor (and nutrients) from greens, tomatoes, red onions, artichoke hearts, capers and a touch of parmesan cheese. No heavy dressings needed!

Ingredients

  • 1 cup uncooked orzo (preferably whole grain version)
  • 1 package (8 ounces) DOLE Mediterranean Blend Salad, chopped
  • 2 cups cherry tomatoes, quartered
  • 1/2 cup finely chopped red onion (about 1/2 an onion)
  • 1 jar (6.5 ounces) marinated artichoke quarters, drained
  • 1/2 cup shredded fresh parmesan cheese
  • 1/2 cup red wine vinegar
  • 1/4 cup capers

Directions

Serves

1Cook orzo according to directions and let cool.
2Toss with remaining ingredients.
