Endless Summer 3-Bean Salad

Inspired by DOLE Salads. SUPERFOOD INGREDIENT: Beans. These plant-based pods provide protein, heart smart fiber and energy enhancing iron. Include a variety of beans in your diet to lower cholesterol, balance blood sugar and reduce your risk of having a heart attack.

Ingredients

  • 1 can (15 ounces) garbanzo beans, rinsed & drained
  • 1 can (15 ounces) dark red kidney beans, rinsed & drained
  • 1 cup frozen shelled edamame, thawed
  • 1/4 cup finely diced red onion
  • 1 lemon, juiced
  • 1 package (10 ounces) DOLE Endless Summer Kit (Contains romaine, carrots, red cabbage, summer vinaigrette, swiss/gruyere cheese, sunflower seeds, croutons, pepper and herb seasoning.)

Directions

Serves

1Toss garbanzo beans, kidney beans, edamame, onion and lemon juice. Let sit for 10 minutes.
2Toss with remaining salad ingredients.
