Easy Blueberry Peach Biscuit Cobbler

Your family and friends will think you spent all day preparing this dessert. However, it is straight forward, quick to prepare, then pop it in the oven and walk away.

Ingredients

  • Fruit Filling:
    • 4 peaches
    • 1 pint blueberries
    • 1 Tablespoon arrowroot
    • Cooking spray
  • Easy Biscuit:
    • 1 cup whole wheat pastry flour
    • 1.5 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 cup plain lowfat Green yogurt
  • 2 Tablespoons sugar
  • Honey Ginger Yogurt Topping:
    • 1 cup plain lowfat Greek yogurt
    • 1 Tablespoon honey
    • 1/2 teaspoon fresh grated ginger

1Preheat oven to 450 degrees F.
2Slice peaches and toss with blueberries and arrowroot. Put in 2 quart (about 8X10) baking dish misted with cooking spray.
3Combine flour, baking powder and salt. Add yogurt and stir until dough forms.
4Roll dough into 8” log and cut 12 pieces. Form each into biscuit/disc shape and place on fruit.
5Top each biscuit with 1/2 teaspoon sugar.
6Bake for 35 minutes, until biscuits are golden and fruit is bubbling.
7Stir together topping ingredients until well combined and serve with cobbler.
