Caprese Chopped Salad

Inspired by DOLE Salads. SUPERFOOD INGREDIENT: Tomatoes. The abundance of antioxidants found in tomatoes, (particularly the trifecta of carotinoids: lycopene, lutein and zeaxanthin) can improve your eye health. Additionally, its phytonutrients may improve blood platelet quality, lowering the risk of atherosclerosis.

Ingredients

  • 4 Tablespoons balsamic vinegar
  • 2 Tablespoons olive oil
  • Sea salt & black pepper, to taste
  • 1 package (10 ounces) DOLE Italian Blend, chopped
  • 1 package (0.75 ounce) fresh basil, chopped
  • 1 pint golden grape tomatoes, halved
  • 1 pint red grape tomatoes, halved
  • 4 ounces fresh mozzarella pearls

1Whisk together balsamic, olive oil, salt and pepper.
2Toss with remaining ingredients.
