Bulgar Chickpea Pistachio Salad

Inspired by DOLE Salads. This salad is a satisfying, complete meal that includes plant-protein plus healthy fats.

Servings: 4

Ingredients

  • 1 cup uncooked bulgur
  • 1.5 cups water
  • 1 can (15 ounce) chickpeas, rinsed & drained
  • 1 bag (10 oz) DOLE European Blend Salad
  • 1/4 cup shelled pistachios
  • 1/2 red onion, chopped (about 1/2 cup)
  • 1/2 cup chopped parsley
  • 1/2 cup red grapes, halved
  • 2 lemons, juiced
  • 1 Tablespoon olive oil
  • Sea salt & black pepper, to taste

Directions

  1. Put bulgur and water into pot and bring to boil.
  2. Turn down to a low simmer, cover and cook for about 10 minutes, or until all the water is absorbed. Pour onto baking sheet to cool.
  3. Toss with remaining ingredients.
