Arugula & Avocado Salad w/ Grapefruit Vinaigrette

Inspired by DOLE Salads. KEY ENERGY BOOSTER: Grapefruit. Aside from health benefits like appetite control and heart health, grapefruits perk you up thanks to vitamins B & C and an invigorating scent.

Servings: 4

Ingredients

  • 1 grapefruit, peeled/quartered/seeded
  • 3 Tablespoons chopped fresh cilantro
  • 2 teaspoons honey
  • Sea salt & black pepper, to taste
  • 1 package (5 ounces) DOLE Arugula
  • 1 avocado, peeled/seeded/cut into 12 slices
  • 1/2 cup thinly sliced red onion (about 1/2 onion)

Directions

  1. In blender, pulse grapefruit, cilantro, honey, salt and pepper until smooth.
  2. Lay down arugula on a large platter.
  3. Top with avocado and onion slices.
  4. Drizzle with grapefruit dressing.
