Seasoned Vinegar Cucumber Salad
Makes 8 servings (1 cup each)

INGREDIENTS
1/2 cup rice vinegar
4 teaspoons agave
1 teaspoon salt
10 cups thinly sliced English cucumbers (about 3 long cucumbers)
1.5 cups finely sliced red onion
3 Tablespoons finely chopped mint (about 16 leaves)
6 Tablespoons chopped peanuts

DIRECTIONS

  1. Whisk together vinegar, agave, and salt.
  2. Toss with cucumber slices, onion, and mint.
  3. Marinate at least 20 minutes. Drain liquid if desired before serving.
  4. Top with chopped peanuts.
