Nutty Brown Rice & Broccoli
Makes 4 servings (2 cups each)
INGREDIENTS
2.5 cups water
1 cup uncooked brown rice
2 teaspoons olive oil
2 cloves garlic, minced
5 cups chopped broccoli
2 Tablespoons each of chopped almonds, walnuts, pinenuts
1 lemon, juiced
Sea salt & pepper, to taste
DIRECTIONS
NOTE: Serve with 3-4 ounces of your favorite protein such as chicken, salmon, shrimp or tofu.
