Flex for a Day.
Try one of these five ways to be flexitarian today:
  1. Perfect Pasta. Toss canned white beans (rinsed and drained) into your favorite whole grain pasta dish for extra protein and fiber.
  2. Beantastic Burrito. Make a fast and flavorful burrito with canned low-fat refried beans, lettuce, tomato and guacamole in a whole grain tortilla.
  3. Super Spud. Heat canned vegetarian chili and pour on a baked potato for a healthy meal in a hurry.
  4. Speedy Stir-Fry. Sauté frozen veggies, pre-cooked brown rice, edamame or tofu, and teriyaki sauce in a hot wok or pan.
  5. Lentil Lunch. Mix canned lentils (rinsed & drained), shredded carrots, chopped cucumber, sliced red bell pepper and Italian salad dressing and stuff mixture into a whole grain pita.
