Raw Zucchini NoodlesRaw to the Rescue.
Eat more raw and lightly cooked produce to stay nourished and energized. Try this quick 3-ingredient recipe for Raw Zucchini Noodles with Artichokes and Sundried Tomatoes:

  1. Cut 3 zucchini into noodle shapes with spiralizer* or vegetable peeler.
  2. Toss raw noodles with one 6-ounce jar of marinated artichokes (not drained) + 2 Tablespoons julienne sundried tomatoes (drained).

*Raw produce noodles can be made with a kitchen tool called a spiralizer. Find my favorite one here at Amazon.com.
